Spring is here! The hungry gap is behind us, and the markets of Istanbul are once again overflowing with in-season produce.
Mountains of peas in their pods are among the first arrivals, and I try to use it as much as I can during the short season. Every week, I also freeze some for the months ahead.
One of my favourite dishes to make is this simple and comforting stew of peas and potatoes braised in an unmistakenly Aegean sauce. Popular in both Greece and Turkey, I can only recommend giving it a try.

The perfect side dish for kebabs and other rich, meaty food 👌
Sumac onions are a staple at kebab joints and anywhere serving offal, but their tangy zing makes them delicious indeed with any grilled meat, helping to cut through the fattiness of the meats.
It`s a very simple affair that takes no time at all to prepare. Simply massage sliced (red) onion with salt, sumac and lemon juice, leave for a bit, then add parsley.

Sometimes the most unassuming of dishes are the ones you truly don`t want to miss. This, I find, is even more true for Turkish cuisine than any other I know.
Case in point: Celeriac braised in olive oil as well as plenty of freshly squeezed orange and lemon juice. So simple, so delicious. It`s my favourite thing to eat alongside a piece of roasted fish in winter.
