red onion

halved and cut into thin slices

sumac

lemon juice

flat-leaf parsley

leaves only, chopped
salt
How I make it
Rub the sumac, lemon juice and a little salt into the red onion until completely mixed and slightly softened. Set aside for 10-15 minutes.
Mix with the parsley and serve immediately.
Tips & notes
While this salad keeps well for a few hours, it's best made freshly.
